IV stands for Initial Values. It's why, even if two Pokemon with the exact same natures and EV spreads won't have the same exact stats.

In order to determine your Pokemon's IVs, you'll need to look online for a Calculator to determine all of them. You can determine your Pokemon's highest IV by the note that appears in the summary. These traits will help you guess when you learn what they mean, such as "Loves to Thrash about" signifying a high Attack IV, "Loves to Eat" being a high HP, and so on. IVs will range anywhere between 1-31 and are randomly determined for Pokemon.

Despite being random, IVs can be manipulated for bred Pokemon. IVs for bred Pokemon are determined by taking 3 random IVs from each parent, meaning two Pokemon with high IVs will breed a child with high IVs all around.

It'd be impractical just to breed and pray to get a certain IV score, so in order for maximum efficiency, you'll need an Item you'll see a ton of during EV training. The 'Power' items.

When equipped with a Power Item, the corresponding IV will be transferred to the baby. For example, say you have a Weavile with a speed IV of 30, and are now going to breed it for some reason. If the Weavile is equipped with a Power Anklet-(Speed), then the baby gets two random IVs from Weavile and It's speed IV.
